"Tom Kha is one of Thailand's famous soups," according to Chef Rolf Schmitz of the Regent Hotel's Spice Market restaurant.  In a joint study by Thailand's Kasetsart University alongside Japan's Kyoto and Kinki Universities found that the ingredients in Tom yum and Tom Kha soups are 100 times more effective in inhibiting cancerous tumor growth compared to other ethnic foods. The soups was so effective that scientists sought to extract some of the chemical compounds that seem to be the most effective.

Along with these properties, the researchers began to focus on what different kinds of edible plants were in the region, these include limes, lemongrass, and a variety of peppers because the cancer pattern in people in Asia, especially the southeast Asians, is very low, when compared with the cancer patterns in European as well as Western countries. In fact, the Thais especially, have a much lower incidence of digestive tract cancers.

"The joint international Thai/Japanese  study isn't the only one being conducted, but it is by far the most famous to this day because Tom-Yum and Tom-Kha was said to be 100 time more effective in inhibiting cancerous tumor growth," says Alan Wong, GM of Kung Fu Thai & Chinese Restaurant in Las Vegas. "What I wonder is if the positive effect of Tom-Yum and Tom-Kha might be due to the cumulative and combination of ingredients as much as the ingredients themselves."

Like most authentic Thai dishes, cooking Tom-Kha is an exercise in patience along with passion.  This unique soup is typically made with many fresh ingredients such as lemongrass, kaffir lime leaves, galangal, lime juice, fish sauce, creamers and crushed chili peppers.  Patience comes in the form of slowly simmering the soup allowing all the ingredients, including the chosen protein to absorb the ingredients, so the diner can Enjoy their meal.

Not to be undone, Tom-Kha Chicken Soup - was created to appease the appetites of most Western diners.  Although fresh cuts of white meat chicken breast can be substituted in place of the sliced chicken thigh meat for a slight upcharge, we recommend the dark meat since dark meat  has the tendency to absorb more of the ingredients when compared  to breast/white meat.

At the oldest most authentic Thai restaurant in the city of Las Vegas, Kung Fu Thai & Chinese Restaurant, Wong says that they use a special roasted chili sauce to bring out the flavors. The soup, has to be maintained at a constant 160 degrees or more, when it served, which is why they serve it in a tureen or Hot-Pot or “Fire-Pot” is what the diners call it these days.  It is essentially a metal soup bowl with a funnel for the flame in the middle to keep the contents blazing hot.

"As much as we hate to see diners take home leftovers, Tom-Kha is one of a few dishes along with the Tom-Yum Soups that always seems to be improperly re-heated well, this is partly because it loses its flavors as the soup cools down, not too many diners know the exact optimal temperature in order to maintain the Taste-integrity of the soup," says Wong. 

"Finally, I really think the medical community may want to take an in-depth look at the combination of ingredients in the Tom-kha Soups as well as the temperature at which the soup is served. As all Good Thai chefs know; different temperatures cause ingredients to interact differently, varying and changing the taste and perhaps any health benefits. Have you ever heard of a cold chicken noodle soup for the flu."

Although Tom-Kha Soups is generally served with Chicken or Pork, Kung Fu Thai & Chinese has made variations to cater to more people. Tom Kha Shrimp  -  ต้มข่ากุ้ง  includes a different variety of protein,  Jumbo Shrimps.
