Egg Foo Young Origins


Affordable, yet Delicious Tradition

It is the mid-1800’s, the California Gold Rush was in full swing, drawing in prospectors, and gold diggers migrating into the Golden State from around the world.  More and more migrants descend into California, approximately 25,000 came from China during this period.  The migrants are mainly Cantonese immigrants, from Guangdong province, in Southeastern China, who began arriving in San Francisco around 1849.  Most men from this part of China found jobs building out the transcontinental railroad, while those who came with families found themselves opening small shops and restaurants in mining towns and camps in the logging industry.  It is here that the Cantonese style omelet called: “Fu Rong” started to appear in the Chinese family Restaurants in and around San Francisco.  In its traditional style, Fu Rong consist of a fluffy fried battered egg yolks with diced meats, and vegetables often served with steamed rice.  

As more and more small family restaurant and shops sprung up around San Francisco initially as gathering places for these migrants, they began to offer their dishes to the local community.  It is here that the Chinese-American dish Egg Foo Young started to take shape. 

In the mid to late 1800’s, the American-Chinese Egg Foo Young would not of look like the dish you see today, since the Asian Bean Sprouts was not brought over to North America until the early 1900’s.  Neither was the Bok-Choy, which was originally called the “Chinese Romaine” when it was first introduced in the United States.

Cooking the Best Egg Foo Young in Las Vegas

While there are many variations of Egg Yoo Young, even today, here at Kung Fu Thai & Chinese Restaurant, we strive to try harder at giving Chinese food diners more value for their hard earn dollars.  It is for this reason that our Egg Yoo Young is made as a one large egg patty versus silver dollar sized patties found often in the Northeast-New Englund area Chinese restaurants.  This dollar sized alternative style of Egg Yoo Young reduces the amount of ingredients the Chef is able to include in the patty, resulting in a less satisfying fewer substance patty, often chosen to reduce cost.

By using the single large patty approach, we are able to include more vegetables into our Egg Yoo Young, including; Fresh finely diced green cabbage, celery, white onions, and premium Oriental Bean Sprouts, all mixed into a bowl of fresh cracked Extra-Large USDA rated AA Eggs, which is then pan fried into a golden large patty.  The chef then prepares the gravy, depending on what the patron orders, many protein options are available to the diner, including:

Cooking a Great Combination Egg Yoo Young involves using tender home-made BBQ Pork, that is marinated with premium Chinese and Thai herbs and sauces, fresh slices of chicken leg meat, bay sized shrimps, along with Surimi crab slices, made from grounded white fish, mainly Alaskan Pollock, adding natural crab flavoring including paprika, giving it the crab-like appearance.  
Diners who choose the combination are in the mood for a variety of protein in their Egg Yoo Young.  Some are overwhelmed at the number options available, and simply want everything.  The combination lets diners enjoy Egg Yoo Young with family, enhancing the dining experience no matte where they choose their gathering place.



Certified Angus Beef Egg Foo Young 


The first Egg Yoo Young to be cooked with Certified Angus Beef was in November 2011, in Las Vegas, Nevada.  This was when Kung Fu Thai & Chinese Restaurant received the “Angus Beef Certification” from the Certified Angus Beef Brand, a first-class label given by the American Angus Association since 1978.  This designation is considered a grade higher than USDA CHOICE and USDA PRIME.  By using the Finest Beef on the market to cook The Best Egg Yoo Young Beef, our diners who prefer “meat and potatoes” and are used to Kobe beef, can have their cake and eat it too.  As of March 2026 we are proud to be the only Chinese Restaurant in America to offer Certified Angus Beef Egg Foo Young to diners who live in Las Vegas as well as tourist and visitors to Sin City as well. 



Savory Shrimp Egg Foo Young in Las Vegas
